So Very Thankful!

This year, I have many things to be thankful & grateful for. I truly am so blessed.



Since last thanksgiving:

Engaged!


My Family (Big bro missing from pic)


Family trips



New niece




Graduating as an RN, BSN & Getting a NICU job right away!




Spending time with the littlest members of my family (whether they be happy or not)!


And of course, the bounty I'll be sharing in tomorrow!

For all you procrastinators

Do you need to bring a side to dinner tomorrow? Not sure what to do? Make Sweet Potato Souffle--it's the best dish ever!



Sweet Potato Souffle

3-4 Cups (per 4-6 servings) of cooked, skinned, mashed sweet potato or yams
1/2 Cup melted butter
2 eggs, beaten
1 tsp vanilla
1/3 Cup milk
1/3 Cup orange juice
Dash of cinnamon and nutmeg if you like

Pre-bake sweet potatos or yams, peel and mash. Mix potatos with butter, eggs, vanilla, milk, and orange juice.

Place in pretty flat baking dish or pie pan.

Mix up topping:
1 Cup brown sugar
1/2 Cup self-rising flour (regular is fine if you don't have self-rising)
1 1/3 Cup softened butter
1 Cup chopped pecans (if you like)
(Add mini-marshmallows, and coconut shavings on top if you like)

Sprinkle topping over potato mixture and bake for 30-45 minutes at 350*F. Topping should be nicely browned when done. Serve hot.

Preppy Presents

I LOVE to wrap gifts. I think the presentation is just as fun as what's inside, and it shows that you put time and effort into the gift.

Case in point: I have a semi-preppy friend who adores the pink and green color combo. Her Birthday was a few days ago, and I did this for her:


I wrapped with pink and green paisley paper, tied with a pink satin bow. (I may add a charm to the bow, but not sure which one yet).


I even found a fabulous pink and green card at FredMeyer/Kroger (they have a surprisingly good card section!).

Unfortunately I wrapped the gift before thinking to take a picture of what's inside. I can't find a picture online, but it's an adorable pink and green madras-esque camisole with tiny butterflies and lace trim.

Scary Baby

Today I cared for the scariest baby I have seen to date.

The poor kid had some respiratory distress after birth at a small community hospital, and eventually Coded.

And a full code it was; poor boy required chest compressions, intubation, and epinephrine. By the time our NICU transport team arrived his little lungs had been pounded so hard on the ventilator that he had a pneumothorax. Upon arrival at our NICU, he'd had enough trauma to his lungs, that he got a hemothorax and 2 more pneumothoraces.

To date, he now has had no fewer than 11 lines of a sort coming from his poor little body. 4 of those are chest tubes.

He also has gained 1 kilogram (2.2 POUNDS) of edema (water weight). The kid looks about 6 weeks older than his gestational age and proportionate size should be.

The Docs think he may have a genetic disorder of a sort in which his lungs do not produce surfactant, which the body normally makes to keep one's lungs from collapsing. I think this is quite probable, because his XRays show that his lungs are not shaped normally, like this:

His are shaped more like a pyramid. They want to run some genetic tests on him, but I'm not sure that'll happen because they cost about $3000 and the results won't help us to better care for him as there is no "cure" if he does have this disorder.

I'm going back in tomorrow, hopefully he's doing quite a bit better!

Update

I feel very disjointed from my Blog lately. The inspiration is just not coming.

I do want to thank The Prep-E Girl for bestowing an award upon me. E, you are just too darn awesome! I just can't get over our similar views on so many things!


Work tires my little brain out so much that I don't have the energy to blog about it when I get home...and by the time I do have energy, the stories just don't sound that 'cool' anymore.

The wedding planing has on the back burner for me lately. I am meeting with the coordinator on Thursday so I better get my act in gear! I know she'll want updates from me!

Here's what I have been doing wedding-wise.
*Made a 2-page to-do list! AGHHHH!
*Figured out a number for the rehersal dinner and are braistorming places to hold it. [More on this topic (and it's guest list) later].
*Figured out how many hotel rooms we need to "block." Now we just have to negotiate the cost...
*Made a sample veil! I'll take pictures and blog when I make the real thing.
*Pastor meeting: no results of our follow-up email yet. Darn! I'm sure the pastor isn't happy with our choices.
